Wheat Belly Recipes – Almond Bread

Got a wheat belly? How about some wheat-free, grain-free bread. Yes, bread. Here is a quick and delicious recipe that you can cook up in a couple of minutes.

Keep this in mind: The new flour is almond flour. There are other seed flours, of course. Almond flour seems to be the best for overall ease of handling and for nutrition. Here is a quick recipe for making a single slice of bread with almond flour. I got this from a friend of mine who showed me how to make it and how absolutely delicious it is.

Ingredients

2 tbsp butter
1 pinch salt
1/4 cup almond meal
1 egg
1/2 tsp baking powder

Directions

Melt butter, then add salt and almond meal. Stir well. Stir in baking powder. Beat egg in separate bowl, then stir into almond meal mixture. Microwave on high 1 minute, or more until done. (Experiment with this for your oven.) Let cool on rack. Toast lightly to firm up more, if desired.

Delicious!

    The Almond Bread sounds delicious – but I’m wondering, for those of us don’t eat microwaved food, what might replace that part of the recipe?

    Hi, Samantha: Great question. I would cook and toast it at the same time, either by frying or by broiling. How does that sound? I will test it. If you do so before I do, let me know what you did and how it worked out. Thanks!

    I’ve been buying a locally made artisan bread that’s made out of coconut flour, water, sea salt, and a bit of coconut for texture. And sometimes some raisins. Period! What are your thoughts on how this would fit with the Wheat Belly diet? It’s absolutely delicious. Each slice, since its an artisan bread, is about 6 inches long by 1 1/2 inches wide.

    Hi, Bente: Coconut is one of the darlings of the paleo-diet crowd, which eschews cereal grains from the get-go. I’m all for it. And the bread you mention sounds delicious.

    Hi, Gail: I didn’t make a note of it. However, I found this link that gives you some useful information: http://recipes.sparkpeople.com/recipe-calories.asp?recipe=1075110. The only calories I am concerned about, though, are ECC (effective carb calories … i.e., those not from fiber).
